As owner of Absolute, I was fortunate — one crazy Absolute morning — to find a true shining star in our restaurant kitchen! Matt was our Chef de cuisine for over 6 1/2 years at Absolute! Extremely creative and talented, Matt is one of my favorite chefs of all time, so when I opened kimi’s mountainside bistro, it was only natural that I brought him along! Some of the wonderful dishes Matt created for us at Absolute include our Cashew Crusted Sea Bass on a bed of Leek Puree, drizzled with Lingonberry Chutney and Butternut Squash Soup with Crispy Cinnamon Wonton Skins!

Matt and I have literally traveled the world, looking for inspiration for new ideas. Diners agree: What I envision as a true palate pleaser, Chef Matt can create and deliver!

Matt helped us open Dijon Bistro Provencale, our French Bistro. Our tasting menu consisted of some Creamy Escargot Bleu d’Bresse and a Pistachio Nut Country Pate that was totally awesome!

Now as we open our new “kimi’s mountainside bistro” I have once again Chef Matt at my side, creating some of the tastiest treats here in Utah!  Some of the summer favorites have been the Shrimp Goyza — marinated shrimp, enoki mushrooms, cilantro mint salad, ginger soy glaze, crispy goyza and the Utah Peaches & Cream Corn Soup.  For a lighter fare, Chef Matt”s Bistecca is a must-have with the heirloom tomato relish, arugula, shaved parmesan and sliced grilled beef tender shoulder!

Cuddly as a bear with a heart of spun honey, Matt is truly a wonderful person and honestly one of the most talented chefs that worked for us during our 20+ years in the restaurant business!  I am so grateful to have him in my life as a special friend and extremely dedicated chef!
